So, if there's any reason you can't or don't want to install the software, your pro keyboard and mouse gets a little less pro.
As far as hardware is concerned, I think the MX Master 3 is an outstanding mouse, and I can see why the MX Master series is so popular with photo and video editors. As for the MX Keys, however, I wasn't impressed with the tactile feedback. The keys feel a little mushy to me. I realize that this allows for faster travel, but be aware that if you prefer a bright clickity clack keyboard response, this is the opposite.

Aside from @martes 's answer, it'll likely be slim pickings considering it's for Logitech hardware. This may or may not be useful to you, but another option you can consider is using AHK. This depends on what sort of "customization" you're referring to specifically, but with AHK you can map keys (including mouse keys) or bind key/input combos to desired outputs or various functions. Just a word of caution though: while AHK works great with keyboards, it can be a bit hit-or-miss with computer mice, and you may have trouble trying to work with non-standard inputs, e.g., G-Shift key, etc. Hoewever, AHK has an active Discord community (among other platforms), so you can always check in there if you have any questions or need help with setting up a script (I use a G502 myself). Lastly, regarding the security issue, please note that AHK itself is fully portable, which means you can compile your script into an .exe and run it from, e.g., a USB flash drive on any Windows OS workstation, and doesn't require any software installation.
In Logitech, where are the indicator states (on/off) for Fn lock, Numlock? I can't even seem to locate them. They should be right in those keys themselves. Logitech always reinvents (perverts) existing standard keyboards for "innovation". They don't realize they are making them worse.
To use Bluetooth, change the channel on the bottom of the mouse, and click the connect button. Now, search for the mouse with a bluetooth manager of your choice and pair. In future it should connect as soon as you switch to that channel when your bluetooth is active.
